Orange Jello with Carrots and Crushed Pineapple

Ingrediants

2 large boxes of Orange gelatin
1 cup of grated carrots
1 2o oz can of crushed pineapple
Cool whip

Directions

Drain crushed pineapple(save juice). Prepare gelatin as directed, excluding cold water. Replace cold water with saved juice, add water to complete the directions. After diluting gelatin add crushed pineapple and grated carrots. For ideal serving mold gelatin mix into a 13 X 9 glass pan. Serve gelatin by cutting in squares and top each serving with cool whip(optional).

Cranberry Salad

1 can of whole cranberries
1/2 cup of pecans
1 can of mandrin oranges

Mix together.

Festive Cranberry Jello

1 large box of Raspberry Jello
1 medium green apple
1 can of crushed pineapple
1/2 cup of chopped pecans or walnuts
1 can of whole cranberries

Prepare jello as instructed on box, add chopped green apple, crushed pineapple, cranberries and pecans.

Let it set, after two hours mix lightly(all fruit will be at top). Let set til ready to serve.

If you don't like green apple, you can substitute with mandrine.

Tradition

Every Christmas my brother Paul makes this salad. It's so refreshing after a heavy meal.

Blueberry Mousse

2 packages of Raspberry Gelatin(small)

2 cups hot water

4 oz cream cheese

1 med can crushed pineapple

1 can blueberries(not pie filling)

2 cup dream whip- prepare by following instructions on box

1/2 cup finely chopped celery

1/2 cup pecans


Drain fruit (both) save juices.

In blender add gelatin to boiling water, melt cream cheese into gelatin, add 1/2 cup of saved juices. Pour into bowl let gelatin set for approximately 8 hours. Fold dream whip, celery,pecans and fruits. Let it set for approximately 1 hours.

**Do not exclude celery, if removed salad will be to sweet the celery absorbs some of the juices. Also this salad is help you digest after eating a heavy meal and the celery helps.


TRADITION
This salad was passed on to my family by my Aunt Sayda, which she got from her mother in law - Grandma Call. I mostly serve this salad during the Easter holiday(because of it's color) but it can be served with any meal. My Aunt and her children continue to prepare and serve this salad in memory of Grandma Call, because it was one of her favorite salads. I too have a fond memory of Grandma Call . . . I always wanted to help her in the kitchen when we go visit her in Logan, UT, if she was making this salad she would always ask me chop the celery. And she would "say O my word you've done a beautiful job on that celery, you've really have left it so finely chopped!" I always thought I had left it to small, but she insisted that it was beautiful!
